Healthy Blueberry Muffins

Ingredients:
1 egg, beaten
¾ cup Skim Plus milk (Original or Lactose Free)
½ cup vegetable oil
2 cups flour
1/3 cup sugar
3 teaspoons baking soda
1 teaspoon salt
1 ½ cups blueberries

Directions:
Combine egg, Skim Plus and oil until well mixed. Add all dry ingredients and stir until just moistened. Gently stir in blueberries. Distribute evenly in lined muffin cups (2/3 full). Bake at 400 for 20 minutes or until lightly browned.
