Lo-Cal Crustless Spinach Quiche

1 10-oz. frozen chopped spinach
1 bunch scallions, finely chopped
¾ cup egg beaters
1 cup Skim Plus Fat Free Half and Half
10 ½ oz. lite jarlsberg cheese, diced
salt and pepper to taste
1 ½ tsp. ground nutmeg
A few drops of hot sauce to taste (if desired)



Preheat oven to 375 degrees.

Microwave spinach for 4 minutes and drain and squeeze dry and combine with chopped scallions in large bowl. Add remaining ingredients and adjust seasonings to taste. Pour into a 9” pie pan sprayed with cooking spray. If desired, you can spray a little butter on top to help with browning. Cook approximately 40 minutes. Let cool 5 minutes and serve. 8 servings
